Three Things - 10/28/2011

Another Friday is here!  Why does it seem that as I get older, the days, weeks, months just rush by?

Oh well, here we go!

Three Things I Am Loving:
1.  Act 80 Days.  Today ACE and I both have an ACT 80 1/2 day.  Which means school for us is done at 1:00.  I love days like this!

2.  Making classroom treats.  Okay maybe I don't particularly love making the treats, but what I did love was the gratitude.  ACE came downstairs to find me frosting the cookies (which is a chore that takes me FOREVER!).  He leans over my shoulder, inspects them and says "Mom, you're the best"  My heart melted, I grinned from ear to ear, I leaned over, kissed him on the cheek and said "I love you so much".  I would have made 30 more right there on the spot if he would have asked me to.

3.  Roses from my husband.  Well, not actually purchased by him, but he brought them home!

Three Things I Am Not Loving:
1. Uncertainty.  Dislike it very much.  Turnin' it over to God I tell ya!

2.  Cold weather.  I like being on our toasty home, but hustling out to a cold car, driving in a cold car (until it warms up), running in to wherever I am going - not ideal.

3.  The rapidly approaching holidays.  LOVE the holiday season, it's just the stressful part preceding it.  Guess it's another thin\g to turn over to God...

That's a wrap!  A fun-filled weekend of a little lacrosse, a little pumpkin carving and family time.  Son #1 will be thrilled!

It's OK Thursday {4}

Another week - flown by - we're still here doing our thing.  And our thing has been going good this week.

It's OK...

...to be sad that Halloween is almost here and I will put my adorable decoration away for another year

...to realize than within that year, my eldest son will turn 16 and I will turn 40 - ughhhhh.

...to be more than slightly addicted to Pinterest

...to enjoy Bible Study when there are only a few women there

...to be super excited that the new kitchen employee (dishwasher) starts today and I won't need to do that job anymore

...this is Son #1's first week of indoor lacrosse & Son #2's last

-to be a little nervous about Son #1 playing indoor lacrosse again after last season's devastating injury

...to be giddy when I have a menu planned for the whole week and shop accordingly

...we may get some flurries this weekend

...it's our last home football game this Friday - and it's homecoming!

...to secretly love going to the homecoming festivities to socialize with my mom friends

What We Ate - 10/25/2011

I took a couple pictures of last night's supper.  Because I'm like that! 

Our menu was Diner Meatloaf (I got the basic recipe from Taste of Home, but needed to modify it a little bit due to lack of a couple ingredients (who knew I was going to use ALL of the garlic to make garlic bread to accompany our lasagna the night before?).

First you chop up one large onion (next time I will only use 1/2) and one rib of celery.  I sauteed them in a tablespoon of butter since we were out of olive oil (not my fault!  SOMEONE used all the olive oil and neglected to tell me so I could put it on the shopping list).  Saute until tender.

While the onions and celery are gettin' their groove on, you mix (2) eggs, 3/4 c. bread crumbs, 1/3 c. ketchup, 1 tsp. dried parsley, 1 tsp. salt, 1/2 tsp. pepper and 1/4 tsp. ground nutmeg.  I didn't take a picture of this mixture because frankly - it looked gross.  You then cool the onion and celery mixture and add it.  Lastly you add 2 pounds of ground beef and mix well.  I use my hands because they work so much better than a spoon.

I then transferred the mixutre from my mixing bowl to my brand new Pampered Chef Fluted Stoneware Pan (I wanted to start seasoning it!).
It baked at 350 degrees for 1 hour 15 minutes.  While it baked, I made a box of Hungry Man Au Gratin Potatoes and a pack of Pillsbury Grands Jr. Biscuits.

I also made a little sauce to spoon on top of the meatloaf if so desired.  Tomato Soup, a little canola oil (brecause once again - out of olive oil!) and some Pampered Chef Seasoning - Crushed Peppercorn and Garlic.  I brought that to a simmer on the stove.

The supper was met with mixed receptions. 

Jerry and I loved all of it. 

Austin ate a piece of the meatloaf and devoured the potatoes. 

Aidan ate about half of his piece of meatloaf and had a couple biscuits.  He doesn't like potatoes.

Will I make this recipe again - ehhh - probably not.

Weekend Recap

We had a marvelous weekend.  Not a lot of running around to do.  Just enough.  We spent Saturday working around the house in the morning & early afternoon.  We made a couple treats to take to Haley & Jenn's Pampered Chef party.  It was a great day.

It makes me laugh that we don't spend more time over in York with Clark, Haley & their families.  I mean come on, it takes an hour to get there.

That's on my list of "Things to make life rich".  Spend more time with family.  It does a soul good.

Jerry took a few pictures while we were there.  (Of course it was a family affair since Maggie, Steve, Charlie and Eli were going to be there!)

We arrived at Aunt Brigette's house a little before 4:00 and stayed until about 9:30.  It was such a great time.

This was after the party.  The kids were all playing musical chairs. 

Charlie became fast friends with Landon. 

Clark - what a handsome guy. 

Eli finally warmed up to me at the end.  He is so funny!
I may have given him some watered down soda -
for which his mother gave me a punch in the back!
I think something was lost in translation - she said
"No pop".  She didn't say anything about soda!

Camron loved Austin.  I was surprised that Austin was
picking him up and carrying him around. 
He has claimed to not really like little kids. 
I think he is putting up a front.

And my sweet boy.  He was so tired after playing with all the kids.
He fell asleep almost immediately after we got in the car to
come home.  When we pulled in our driveway and woke him, he said
"We're home already?  How'd we get home so quick?".

Sunday was spent enjoying coffee, donuts and the newspaper.  ACE had lacrosse camp in the afternoon and one of his teammates asked if he would like to come over after practice, have pizza and watch football.  He was eager to do that.  Jerry and I got Little Caesar's for the rest of us (Austin coined "Caesar Sunday").

I watched a couple more of Oprah's Lifeclasses (that Oprah - she's amazing!).

I am going to earnestly strive to apply the things I have learned so far from her.  She is so inspirational.

We capped off our Sunday by celebrating Pop-Pop Ebersole's 82nd Birthday with cupcakes made by our SWEET niece Julie Ann.

A fulfilling and restful weekend.

Three Things - 10/20/2011

Three Things I'm Loving This Week:

1.  Bath & Body Works Sales.  I went to Bath & Body this past Sunday with the intention of only buying two of their large candles.  I came out with a couple small anti-bacterial hand gels and this cute Halloween  soap dispenser - and the candles.  I love their deals~!  I am hoping that I can use this through Thanksgiving (I will turn it around to just the plain pumpkin side) and that I can save it for next year & just refill it!

2.  Ebersole Impromptu Get-Togethers.  Jerry's brother Terry was in town with his wife Carol & their son Zachary earlier this week.  On Wednesday night, all of the Ebersole siblings were together along with most of their extended families.  It's a good time with lots of laughs.
3.  Fall is here!  The tree are slowly changing & the temperatures are getting cooler.  The township lost a lot of leaves the past couple of days with the high winds we had, but the colors are so beautiful with what leaves are remaining.  I am finally figuring out how to adjust the setting on our camera to get the perfect late afternoon shot of the mountain across the street.

Three Things I Am Not Loving:
1.  Change of Season Colds.  I am been snuffly, coughy, achy - just yucky for a couple weeks now.  I dislike taking DayQuil because it makes me feel loopy (at least more loopy than usual!).  Now I am stuffed up and have an annoyance cough.  Not fun.

2.  Change.  Even though I am a big cheerleader for change - I don't like it.  I have started watching Oprah's Lifeclass on OWN and I am realizing that I have a lot of inner and outer changes that need to happen.  Ego vs. True Self?  Yeah, it's going to take a lot of changing.

3.  Disorganization.  For the most part, I am pretty organized.  However, I have a couple (as the Flylady would say) "Hotspots" that seem to be a magnet for clutter and paperwork.  It is a problem which needs to be remedied this weekend.  Even though it is not "comfortable" to get rid of clutter, it is most definitely necessary!

...to want a new car - badly.

...to wonder if I do indeed have a favorite child.

...to want it to snow so badly so we can have a snow day.

...to go to Bible Study for the social time.  (Not really getting a bunch out of this book).

...to wonder if we should go to a marriage counselor.

...to love it when it rains.

...to think about stopping my birthday card sending.

...to hope at least 10 people who I'm not related to read our blog.

Because Fortune Cookies Are Bible...

ACE came home from school yesterday with a fortune from a fortune cookie he got at lunch.

It reads "Something nice is coming to you in the mail".

He thinks this is "Bible" the absolute truth, and that "something nice" is going to magically appear in the mailbox.

I hope he's not disappointed if nothing shows up. 

Maybe I'll just get something & send it to him.

Who I am to crush the hopes of an 11 year-old - pinned on a fortune cookie.

Now to rack my brain to find something nice...

Son #2 & Random

I frequently refer to our youngest son as "Son #2".  His real nickname is ACE (which are his initials).

My sweet boy is growing up so fast, and while there are some of personality traits that I would like to see change as he gets older, there are LOTS that I hope he never loses.
Case in Point #1:  He is not afraid of what his peers think.  Last Friday was Crazy Sock Day at his school.  After a bit of a dramatic incident, I thought of these socks I had (thanks Maggie!) and suggested that he wear these.  He didn't even hesitate.  He sat down on his bedroom floor & threw them on and posed for a couple pictures without much of a fuss.

Case In Point #2: He will stay young at heart. Even though he is 11 (and a lot stronger than me!), he still likes doing things that little kids do. He loved sitting at the Mohnton Halloween Parade and getting lots of CANDY! Secretly I think he loved getting all the candy from kids that know him. I was amazed at all the young girls that would chirp "Hi Aidan!" and throw him candy.  His Mama did not think it was fantastic!  Oh well, I am pretty sure this will not get any better!
He is wearing Shawn's Halloween basket on his head. He makes me smile.


And then just random - the Halloween cookies that I fantasized about making for the party at my friend Wendy's house after the parade. I saw them in a magazine that I get and thought they would be the perfect treat to take. Little did I know that they were going to take so long to frost. My OCD does not handle the tedious process of frosting these cookies.

So there it is a little bit of Tuesday randomness.  After all, I think that word describes us to a "T"!

Weekend Recap

Good morning all! 
We had a fun-filled weekend:

A soup & sandwich sale at the fire company, making cookie treats, Halloween Parade, Halloween Party, Bath & Body Works for the last day of their candle sale (for this month), lacrosse training camp, Little Caesar's pizza & crazy bread, Pop-Pop Ebersole's - bed...aahhhh...

Three Things - 10/14/2011

Three Things I Am Loving This Week:

1. Pampered Chef.  My Pampered Chef order came yesterday.  Actually it came twice.  The first time the Fed-Ex truck pulled up, they delivered two boxes.  Both had stoneware in them, but the little gadgets were M-I-A.  After a quick call to my sister/consultant, she explained that the third box would probably be here on Friday.   I would have to wait until tomorrow to get the rest of my goodies.  Then, what's this?  SURPRISE!!  The Fed-Ex truck pulled up again - with my third box.  Squeals of delight & a haphazard opening commenced.  I loved all the products & wished I could keep them all!  Now I can't wait to try them all out.


2.  CVS Extra Care Card.  I had the ultimate rush last night.  I had CVS Extra Cash Back dollars to use by October 13.  I had a scenario worked out in my head, but I wasn't sure if it was really going to work out.  So off I went.  I bought four bags of M&M's (which they had on sale - 2/$5).  I had $7.00 ECB to spend, PLUS I had (2) $1.00 off coupons for the Pretzel M&M's and $1.00 off two bags of any M&M's.  So in the end...

...the four bags of M&M's were FREE!!  And in actuality, I made $3.00 because I got $3.00 ECB for purchasing $10.00 worth of Mars products.

3.  Homemade Applesauce.  We bought a peck of apples for $3.00.  Came home, peeled & cored them.  Threw them in the crock pot with 1/2 cup of water, 1 cup of sugar and one teaspoon of cinnamon (for 10 apples).  The crock pot setting was High for the first batch and it took about 4 hours for the apples to cook down to deliciousness.  I just used my hand potato masher to break the apples down a little more and it was the perfect tool.  It reminds me of my Gramma Myers' applesauce.  The second batch we doubled and started it at 11:00 at night.  I just put it on warm overnight and then cranked the heat up when I got up the next morning.  The second batch had more pieces f skin & seed casing in it, so I just ran the cooled sauce through my Kitchen Aid Mixer fruit & vegetable strainer.  It worked like a charm.  I am sure we will get more apples because the sauce won't last long in our house!

Three Things I Am Not Loving This Week:


1.  It's October.  Now don't get me wrong, I love fall.  BUT it's already the middle of October people!  I have so many fun Halloween things I want to do and time is running out!  I guess I better get a move on it and get those Halloween activities completed.


2.  The "Volunteer" Fire Department.  My husband has been a volunteer firefighter for umpteen years.  This past week it has worked on my last nerve.  He was out on a search detail for over six hours.  I probably wouldn't have minded it, but it I had an EGD done that morning and wasn't feeling the best and he just left. 

I am coming to the realization that it takes a really wonderful person to be a volunteer firefighter, but it takes exceptional people to be a firefighter's family.

3.  Last Days.  Today is a dear co-worker of mine's last day at work.  She and her family are moving and it would not be convenient for her to continue to work at our school.  She has become a wonderful friend to me and I will truly miss seeing her each day.

To be pissed off that my husband seems to find time to be out at fire calls, but can't seem to get chores done around the house

To LOVE rainy days - I embrace them.  I just want to throw on a pair of yoga pants & watch DVR'd stuff with a blanket wrapped around me - of course!!

To love the adrenaline rush of calling 911

To try not to be annoyed with certain people who go on, and on, and on - about something they told me AT LEAST 5 times

To want to listen to Pastor Keith McGarvey's sermons over and over in the car.  I will not be a Bible moron forever!

To be annoyed that the new Apple update is taking so freaking long to install on my iPad

To be super pumped that the Mohnton Great Halloween Parade is this weekend.  I am making the cutest cookies to share at the party we are going to - in a funeral home!!

To wonder what our lives would be like if we had moved to Erie County

Tuesday Thoughts

Sometimes I think the most random thoughts.  Maybe they aren't random, but I'm sure as I spew them out on to this little blog of mine, they will seem that way.
 First of I am starting to really dislike the "volunteer" part of volunteer fire company.  I am letting it create great strife in my marriage.

I HATE living away from Harbor Creek.  I miss out on all the fun stuff.  Right now my family is harvesting grapes.  I sat at home last night - alone - while my husband searched for a man in Nolde Forest - for SEVEN HOURS.

The man was located - at home.
Tonight I am attending my first Brecknock Township Recreation Board Meeting.

I am just going to check it out an see if it is something I would like to become involved in.  I need a purpose.
I started Oprah's Lifeclass.  I love self-help stuff - LOVE IT!!

My EGD from yesterday showed my ulcer is healed.  I can start taking Protonix once a day - thank you God!!

I am having a lot of poor me days lately.  I need to snap out of it.

I need to compose a better blog post - I will work on it.

EGD Time - again!!

Aren't these the cutest pictures?  I think they are!  They show a "healthy" stomach.  My ulcer is healed (well at least they think it is).

There is apparently part of my stomach that they can't get see to be 100% certain, but the doctor said everything looks good.

This means that I can go back to taking Protonix only once a day (in the morning).  That is good news because I was having a bear of a time remembering to take it 1/2 hour before I ate supper.

Three Things - 10/07/2011

Three Things I Am Loving This Week:  (Once again - it's four!)

1.  This guy.  We have been together for 21 years (October 6, 1990).  I love the fact that he remembers this day.  He still loves me as much (or maybe more) than he did at the beginning. 
2. Pampered Chef Fluted Stoneware Pan.  I had a Pampered Chef Show this past weekend.  My sister Maggie is my Pampered Chef consultant and she did an amazing job demonstrating the wonderful products.  One of the items I got (at 60% off) was this Fluted Stoneware Pan.  She made the most delicious Apple Cake in this pan - IN THE MICROWAVE!  Then as a great consultant always does, she sent me like 50 recipes to use this pan for.  Now I will anxiously await the arrival of this so I can use it!

3.  Making homemade applesauce.  We are going to attempt to make our own applesauce this year.  I have stumbled across a few recipes (and even a few to make in the crockpot!).  I am going to try and replicate my Gramma Myers' recipe.  She made the best applesauce.  I loved that it had little small, tender chunks of apples still in the sauce.

4.  Air conditioner out of the window.  With the threat of a major heat wave out of the picture,  I am absolutely thrilled to be able to see out of the east facing window in our living room.  I was able to put my sweet light-up pumpkin in his place of honor, greeting all who pass and plug him in.  This is a big deal to me.  Now to get the one out of our bedroom window!

Three Things I Am Not Loving This Week:


1.  Politics.  He said, she said.  He's running, he's not running.  I only have to listen to this for ummm...A WHOLE YEAR?!?!?  I feel like I am not smart enough to understand what everyone is talking about and I would just rather not hear it.

2.  Saying goodbye.  I hate saying goodbye.  My sister, brother-in-law and two sweet red-headed nephews were here this past weekend.  We had so much fun visiting with them.  Charlie and Eli aren't "strange" with us, but still it is hard not being able to see them on a weekly basis.  They are so much fun!
3.  Bi-weekly paychecks.  I am having such a hard time with this.  It seems by the beginning of the second week, we are scraping by.  I guess after 19 years of the weekly thing, it will take a little getting used to.

What to do, what to do

Aidan got off the bus yesterday almost in tears.

"What's wrong?"  I asked.

"Nothing.?" was his reply.

I pressed again.  As did his father.

"What's wrong dude?"

"My lunchbox," "It's somewhere on the bus," "and Dave (the wing nut bus driver) wouldn't let me look for it." .  Truly award winning I tell you.

He said that other children on the bus said he got on with it, but he looked for it and could not find it.

We have had our share of problems with Dave.  One day last school year, he decided to do the afternoon bus route BACKWARDS.  You know, drop the last kids off the bus first and the first kids off last.

There were a lot of complaints to the transportation office about that.  Shocking.  I know.

This year, Aidan got off the bus with his binder an absolute wreck - and wet.  The contents were not securely fastened inside.  After asking him what happened, he said that the emergency hatch on the roof of the bus leaks (it was raining that day) and Dave jammed on the brakes causing his book bag to fly off the seat, the binder flew out of the bag and opened up.

Now, if he would have had his book bag zippered shut, the binder would not have come out, but still - a leaking bus roof?  Jamming on the brakes?

We didn't call transportation that day because I don't think I want to be "that" parent. 

Then one who calls and complains over every. little. thing.

But today was different.  I think.

Jerry called the transportation office immediately to tell them about the most recent incident.

The kind woman that answers the phone said she would personally go out and check the bus when the driver got back and would call back.

Well after about 45 minutes she called and said the lunch box was not on the bus and she had spoken to the bus driver who told her that he had instructed Aidan that he wasn't to look for his lunch box and he proceeded to do it anyway.

As a parent I struggle with "believing my son and knowing my son" all the time.  Did he turn on the water works in order to draw sympathy and not the wrath of Mom?

I am sure Dave told him to not look for his lunch box.  But what preceded that conversation?  Was the bus moving?  I bet it was.  I am positive we will never get a straight answer.  He doesn't want to get in trouble. And really.  What 11 year-old boy does?

Aidan knows what I freak I am about his lunch box.  I have lectured him numerous times about taking care of it.

He may very well have left it at school.  I mean how observant are a bunch of elementary school kids?  Did they really see him get on the bus with it?

The consequence is that today he will have to buy lunch at school - Jerry & I will look like "smacked-asses" because we called to complain - again.

We will see if he gets off the bus this afternoon with a lunch box or not.

Why Do I Care?

This past weekend I had a Pampered Chef Show.

I love having these kinds of things, but I hate inviting people.  It's not because I don't like having people come over to my house, it's because well...I don't want people to get an invitation and then feel the need to make something up so they can't come.

This is what I have a tendency to do. 

Okay I never do that.  I will go to the party out of guilt.  And I will spend money that we don't have.

I don't ever want to make people feel like I do over a Pampered Chef Show.

I don't know that I have ever not gone to a home party show that I have been invited to.  I have definitely NEVER gone and not bought something.

So I think it is better to not invite people so they don't have the uncomfortable position (that's how I feel) of saying no.

Then the vicious cycle begins.

I posted a Status Update on my Facebook saying thanks to my sister for coming and doing a show for me and I get comments from people like "I wasn't invited" and I'm sure these friends are not commenting to make me feel bad, but it makes me feel horrible - like the worst friend ever.

I would never post a comment like that.  I am afraid that everyone reads in to stuff like I do. 

The fact of the matter is, probably NO ONE reads in to stuff like I do.

I will throw around every possible scenario in my head of how someone could take how I comment on their Facebook Status.

Which is why I don't comment a lot.  I usually just "Like" statuses.

I don't want someone to be mad at me over a Status Update or comment.

Let me just clarify.  I am not mad at anyone.  I feel like people get mad at me.I deleted the post because I don't want any more comments that I can read WAY TOO MUCH in to and then feel bad about for days.

Part of my brain says "If you would have invited them, you could have had a show over $400 and then you could have gotten another $20 in credit AND another half price item.  Way to go."

Another part tries to justify not inviting them.  "Where would you have put another 10 people?  Your house it not big enough for that!".

So back to the title.  Why DO I care?  The little voices in my head are out of control some times.

Weekend Recap

This weekend was spent enjoying time with the Peters family.

Maggie came & did a Pampered Chef show for me (which was awesome!) and Steve, Charlie & Eli came along to hang out, go to the drags & just have fun!

The following is a camera dump of the highlights from our weekend.
